My weeknights are packed full with homework, night classes, and my duties as a wife and mother. The five or six hours between the time I get off work and the time I go to bed go by way too quickly some nights. I've made it my goal to put together homemade dinners as much as possible, to save money, keep us healthy and get us together around the kitchen table. Over the past month, I've found that I'm really great about putting together a meal plan, but not as great at following through. My work days are sometimes stressful, the baby has rough nights and needs constant attention from me and some nights it sounds easier and more appealing to go through a drive-thru than put together a meal for my little family. Effortless Meals from Walmart have been a dinner saver in my life. They're just as quick and easy as fast food, but a lot healthier and they can be used as they are or put into a more involved meal if I have the time.
On my way home from work, I can make a quick stop at Walmart, before I pick Bensen up from my parent's house, and without going very far into the store, I can grab dinner for night and have enough food to give us a few meals throughout the week. Quick, easy and delicious, that's my kind of meal! As a busy mom, wife, student and employee, I need all of the help I can get and having something precooked or ready to pop in the oven makes all the difference.
The Marketside pizzas are better than frozen pizzas, but just as easy to cook. I threw mine in the oven to bake while Bensen ate his dinner and it was ready for me to eat after he was finished. Because it's just Joe and I eating at our house, this pizza provided dinner for us both and the leftovers were perfect to heat up for a lunch or two during the week. I baked mine in the oven, just as it was, but you could get creative with toppings or try cooking it on the grill depending on how much time you have to prepare dinner. For me, this was the perfect meal for a night when my baby boy needed my attention more than usual and I knew that I wouldn't be able to put together the meal that I had planned. Rotisserie chicken is a staple in every busy mom's life, it's the perfect meal, and can be used in a variety of ways! You can stop by Walmart and grab a rotisserie chicken with one of their delicious sides and a Coca-Cola product and have a meal all ready to go, no preparation needed. I grabbed a container of Red Skin Potato Salad to go with mine, and it was seriously so good! I love to eat my rotisserie chicken as is, use it in a casserole, or in one of the freezer meals that I use to make dinner planning easier throughout the semester. Once again, with just the two of us, this chicken goes a long way. I used some to make a sandwich for lunch one day so that I wouldn't need to go out to eat during lunch and it was a much healthier option than the fast food I would have gone to get if I hadn't packed anything.
One of my favorite additions to any quick and easy meal this summer has been roasted bell peppers. I make them at least twice a week and they pair perfectly with any of the Effortless Meal options that you pick up from Walmart.
Roasted Bell Peppers
Step 1. Slice your bell peppers into wide strips. I prefer the red, orange and yellow bell peppers for eating this way.
Step 2. Place the bell peppers slices on a baking sheet lined with tin foil and sprayed with non-stick spray.
Step 3. Drizzle olive oil over the peppers.
Step 4. Sprinkle salt and pepper over the peppers.
Step 5. Cover the peppers with shredded mozzarella cheese.
Step 6. Roast in the oven at 350° F until cheese is melted. (We also like to grill ours. Just put them in an aluminum pan instead.)
Step 7. Serve alongside your Effortless Meal from Walmart.

Don't forget to pick up your favorite Coca-Cola product to go with it! I know Joe appreciates a little extra caffeine to get him through his long, busy days. The deli counter is right inside the door at the Walmart near me, so it's a quick trip in and out and I'm on my way to pick up my baby and finish up my evening.
